St.Lucian Nina Compton Chef de Cuisine at Fontainebleau Miami Beach Restaurant

St.Lucian, Nina Compton has been promoted to Chef de Cuisine of Scarpetta, the Fontainebleau Miami Beach’s award-winning Italian restaurant. "It's not always about the price of the ingredients, but how to bring out the simplest, brightest flavors from them," Nina.

The scallop dish pictured below is one of Nina's creations that are new to Scarpetta's menu. "Going into spring, I wanted to keep the flavors light and refreshing." Diver scallops with sun choke puree, roasted Buford (Georgia) mushrooms, asparagus, pickled radish, and pine nut gremolata. - Source
